WineryAt Henners we have constructed a purpose built winery to enable us to craft the finest wines. The fruit is hand-picked and sorted into small crates in the vineyard to ensure only the highest quality reaches the winery. At the pressing stage the finest juice, released from the grape at the lightest pressures is taken to ensure refinement. After cold settling (debourbage) primary fermentation can be started to create the base wines (vin clair). Our cellars and fermentation tanks are temperature controlled to create the perfect conditions for elaboration and maturation, allowing complexity and finesse to develop in the finished wine. Allied to this high technology we use the oldest and most traditional methods that have been used for generations. We have enlisted consultants from Champagne for their experience in blending still base wines in order to seamlessly bring out the individual characters of the three grape varieties. Our highly trained winery staff are dedicated to carrying the excellence of the fruit from the vineyard into the bottle. |
